Manual harvest in boxes, followed by drying in a ventilated room for vinification. Fermentation takes place with maceration of the skins for several days in stainless steel tanks. Various pump overs follow in order to extract colour, aromas and flavours from the skins.
Classic dessert wine, to be paired with dry pastries, walnut and chocolate cakes. To be tried also with aged cheeses.
