Manual harvest when the grapes are perfectly ripe. Red vinification with maceration on the skins for about ten days, with frequent pump overs until achieving the desired colour and tannins. Fermentation at controlled temperature in steel tanks.
If young, it is perfect with red and roasted meats. If slightly aged, it goes well with game and aged cheeses.
