Late manual harvest with grape selection. The grapes from the four varieties are de-stemmed and pressed together. Fermentation takes place with maceration of the skins for several days in stainless steel tanks. Various pump overs follow in order to extract colour, aromas and flavours from the skins of the four varieties.
If aged, it is a classy wine that goes well with white and red meat, game, aged cheeses and spicy cured meats.
